Food Preparation Begins

Apparently there are "brain-friendly" foods.  The list is pretty much a clean eating diet which is my jam so this should be fun.

Here's the list I was given to work with:
Organic free range eggs
Organic avocado
Hormel Natural ham
Draper Farms/organic chicken legs
Hard boiled eggs
Celery
Good dip ingredients
cottage cheese
meatballs
tuna
lettuce
asparagus
full fat yogurt
cucumber
berries
blueberries
tart cherries
pepperoni
sausage
zucchini
celery
chives
bacon wrapped chicken bites
cauliflower 
chicken salad with yogurt
edamame
fruit skewers
baked apple chips
coconut whipped cream
turkey breast
skinless chicken
grind own chicken/turkey

red grapes

The task for this weekend is prepping as much as I can for breakfast, lunch and snacks.  Dinners are going to mostly be from Home Bistro's Paleo Dinners for the first week.  Note, that if you want to use a meal delivery service that YOU DON"T have to do anything except heat up, Home Bistro and Freshly are your best choices it seems.  Otherwise, you'll be spending time making the dinners with the mostly pre-cut/measured fresh ingredients.  Super fun for some, but not for this busy working mama or my TBI'd friend.  Biggest difference between Home Bistro and Freshly is the former is flash frozen, the latter fresh.  Home will hold longer in the freezer and can be ordered and delivered much faster.  Freshly (which I would have preferred to try first, frankly), has a two week lead time for first order.  Makes sense if they're doing fresh and refrigerated.  But, I think we'll be ok.

First on the prep list for the week: Paleo Granola and Anywhere Cookies.  I am a huge fan of author Danielle Walker (Against All Grain, etc.).  She's got great heart and great recipes.  If you're looking for grain-free, she's your gal.  



Next is meat prep.  Precooking the salmon and chicken to top salads this week should make assembly a snap. 

Finally, Monday is shopping for the fresh stuff; Tuesday and Wednesday is prep.  A step at a time....

One final note, I love knowing the nutrition contents and will be including this in my menu plan for CAN.  Historically getting this information together easily for recipes has always been a challenge.  So, imagine how thrilled I was with www.myfitnesspal.com newest feature!  You can now copy the link from a web page recipe you find anywhere into their recipe builder and it will see the list of ingredients, the quantities and build the nutrition profile FOR YOU!  Total time saver.  You can save the recipe for use later.  

So, we're off and running!

Thursday is the day we start saving a life from TBI!

One of my dearest friends (Crazy Aunt Nan') of over 25 years was recently in a car accident.  She suffered a Traumatic Brain Injury (TBI). Truth be told, being a little kooky is part of her endless charm so we aren't always sure where one stops and the TBI begins.  Not really.  It's pretty obvious when you've known someone this long.  While not totally off her rocker, it's clear that recovery isn't a fast or predictable process.  Plagued with headaches and short term memory challenges, this thing has slowed down my friend who spends most of her days pouring into others.  While we agree that God's clearly in charge and definitely has a plan, slowing down hasn't come easy.  But since the alternative is a debilitating headache and much slower healing, she's doing her best to slow down and ask for help.  If you're a middle-aged mama who would give the moon to your besties, you know this is a real booger. The Gift

I've been given the greatest gift.  Tonight I'm putting the finishing touches on CAN's TBI healing menu for the next few weeks and decided to bake some fill-in items.  Baking for my TBI-afflicted friend of a bazillion years (is that actually a number?) has been healing, nostalgic and filled me with more love and gratitude for my friend and the community we've shared for the last 30 years.  It's awesome.  We are blessed and I am grateful. Baking tonight includes Grain Free Blueberry Muffins , Brain Fixin' Trail Mix (all me, baby!) and DW's World-Famous Sandwich Bread . On a macro level, the shopping is done.  Thank you Paulie and Fred Meyer's new Clicklis t.  Do you know about this?  Order on-line, pickup when you want.  Takes 5 minutes when you do.  I mentioned to them this week that the only way to make Clicklist more EPIC would be to deliver and put it away for me.  My awesome delivery guy's response was, "by the end of the year".  T
