The Gift

I've been given the greatest gift.  Tonight I'm putting the finishing touches on CAN's TBI healing menu for the next few weeks and decided to bake some fill-in items.  Baking for my TBI-afflicted friend of a bazillion years (is that actually a number?) has been healing, nostalgic and filled me with more love and gratitude for my friend and the community we've shared for the last 30 years.  It's awesome.  We are blessed and I am grateful. Baking tonight includes Grain Free Blueberry Muffins , Brain Fixin' Trail Mix (all me, baby!) and DW's World-Famous Sandwich Bread . On a macro level, the shopping is done.  Thank you Paulie and Fred Meyer's new Clicklis t.  Do you know about this?  Order on-line, pickup when you want.  Takes 5 minutes when you do.  I mentioned to them this week that the only way to make Clicklist more EPIC would be to deliver and put it away for me.  My awesome delivery guy's response was, "by the end of the year".  T

Food Preparation Begins

Apparently there are "brain-friendly" foods.  The list is pretty much a clean eating diet which is my jam so this should be fun. Here's the list I was given to work with: Organic free range eggs Organic avocado Hormel Natural ham Draper Farms/organic chicken legs Hard boiled eggs Celery Good dip ingredients cottage cheese meatballs tuna lettuce asparagus full fat yogurt cucumber berries blueberries tart cherries pepperoni sausage zucchini celery chives bacon wrapped chicken bites cauliflower   chicken salad with yogurt edamame fruit skewers baked apple chips coconut whipped cream turkey breast skinless chicken grind own chicken/turkey snap peas red grapes salmon halibut trout The task for this weekend is prepping as much as I can for breakfast, lunch and snacks.  Dinners are going to mostly be from Home Bistro's Paleo Dinners for the first week.  Not
